Healthier Cob Loaf

A cob loaf, also known as corn loaf, is a classic Australian baked treat usually made with corn, sugar, eggs and butter. While it’s delicious, it is high in sugar, fat and calories. Here is a healthier twist on the traditional cob loaf recipe to enjoy a nutritious treat.

Ingredients:
•1 cup corn kernels (fresh or frozen)
•1 cup whole wheat flour
•1/2 cup corn flour
•2 teaspoons baking powder
•1/2 teaspoon salt
•2 eggs, beaten
•1 cup milk
•2 tablespoons honey
•2 tablespoons melted coconut oil or olive oil

Instructions:

  1. Preheat the oven to 180°C and grease a 9-inch loaf pan.
  2. In a large bowl, combine the corn kernels, whole wheat flour, corn flour, baking powder, salt and eggs. Mix well.
  3. In a separate bowl, whisk together the milk, honey and melted oil.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix. The batter should be slightly lumpy.
  5. Pour the batter into the greased loaf pan and bake for 50-60 minutes or until a toothpick inserted into the centre comes out clean.
  6. Allow the cob loaf to cool completely before serving. Slice and enjoy!
